Furniture Anyone??

*Update!!*
I just sold the desk. WOOHOO!*

I am in the process of moving to Matthew's apartment. I am already here, but my furniture is not. We are selling a lot of Matthew's things, to make room for mine. His stuff has been either free or very cheap, so it's mostly, well, not very good. I sold a computer monitor for $15. I just sold his mattress and boxsprings for $25.




Yes, I said $25. It was in such bad shape that I didn't care how much I sold it for. He got it for free anyways!! LOL!

I sold 2 matching accent tables for $20.

Stuck in a Rut

So, Kristen posted a devotional on her blog. I'm really glad she posted this devotion. I have been in a rut for a while. I haven't made time to spend with God. I pray every day, and go to church on Sundays, but I haven't been reading his Word. Because I always "have too much to do". It's stressful. I'm moving (again!), looking for a job, planning my wedding, etc etc etc. My to-do list is getting in my way. And because I haven't been making the time for God, I feel like I can't do it all. It's so overwhelming, that I just don't do anything. I'm trying, but I need that encouragement sometimes, that seems to never show up. So this devotional is encouraging to me. Thank you, Kristen.

Oh My YUMM!

I have been trying new recipes and practicing my cooking skills. I've never really done much cooking since my mom and sister always did. But now that I'm getting married, I want to be able to cook for my husband.

So tonight I made 2 dishes that I found in the Taste of Home: Cooking for 2 magazine. They were so good that I just HAD to share them!!

Mozzarella Tomato Salad
2 oz fresh mozzarella cheese, cut into 3/4 inch cubes
1/2 cup halved cherry tomatoes
2 teaspoons chopped onion
1 tablespoon minched fresh basil
1 tablespoon olive oil
1-1/2 teaspoons balsamic vinegar
1/2 teaspoon sugar
1/8 teaspoon salt

In a small bowl, combine the cheese, tomatoes and onion. In another small bowl, combine the remaining ingredients. Drizzle over salad; toss to coat. Let stand at least 15 minutes. Stir just before serving.

Prep/Total time: 25 mins Yield: 2 servings

Nutrition Facts: 1/2 cup equals 157 calories, 13g fat (5g saturated fat), 22mg cholesterol, 192 mg sodium, 4g carbohydrates, 1g fiber, 5g protein.


Gouda Turkey Club
1/2 cup shredded smoked Gouda cheese
4-1/2 teaspoons mayonnaise
1 tablespoon thinly sliced green onion
1/4 teaspoon garlic powder
1/4 teaspoon coarsely ground pepper
4 slices whole wheat bread, crusts removed and toasted
2 teaspoons butter, softened
1/4 pound shaved deli hickory smoked turkey
4 slices tomato
1/2 medium ripe avocado, peeled and mashed
2 romaine leaves

In a small bowl, combine the cheese, mayonnaise, onion, garlic powder and pepper. Spread two slices of toast with butter, top with cheese mixture, turkey, tomato, avocado, and romaine. Top with remaining toast. Cut each sandwich in half.

Prep/Total time: 15 mins Yield: 2 servings

Nutrition Facts: 1 sandwich (prepared with reduced fat butter and reduced fat mayonnaise) equals 445 calories, 25g fat (9g saturated fat), 63mg cholesterol, 1,075mg sodium, 33g carbohydrates, 7g fiber, 27g protein.


*Note: I didn't use fresh basil for the salad, but it turned out great with dried basil too! On the sandwich, I used olive oil mayo. I couldn't find smoked Gouda, so I just used Gouda cheese. And I didn't put butter on the bread. But MAN was it all good!

Moving...Again

I'm in the process of moving all of my stuff from my sister's house to a storage unit in Clarksville. It's crazy. I'm also working on getting rid of/organizing Matthew's stuff to make room for my stuff! LOL! He has a lot of clutter. I don't like clutter. I am determined to get everything organized. It may take me a few months, but I'll do it!!

In other news, I'm pretty sure that Callie and Carey will be here on June 20th. Not sure how long. Probably all summer. Unless they start to act up and not do what we say. They know they have to behave or they're going home. (Mostly Carey, but I didn't say that!)

Well, I better go. Matthew's off work today, so I'm gonna take advantage of that and get him to help me clean. WOOHOO!

I am wanting ideas for DIY things I can make for my wedding. I am trying to keep my costs down as much as I can, but still have all the things I want. My friend Katie has gotten me addicted to all things Michael's and Martha Stewart. LOL!

I absolutely love the style of this invitation but I would make my own. Look at the prices! EEK!

Updates

Daddy is at home and is doing much better. He had a few complications once he got home, with his medicines, but they have all been fixed. He has had some trouble getting comfortable, because of the wound site from the surgery, but that is getting better as well.

I still haven't found a job yet, but for the next week, I am back at GroupSource working while one of the other agents is on vacation. I'm so glad, because I get to see my friends again, and I get to make some money that I really need right now!

Matthew and I are looking for a place to live in Clarksville. I decided that I can't afford to live alone, and I don't want just anyone as a roommate. So we're looking for something big enough for us, all of our stuff, and a room for his girls to stay in when they visit. We found a house that we really like, but we aren't sure if we will get it or not. So we're still looking.

And I'm still looking for a job. I have part time stuff, like working at GroupSource and a possible nanny job that would pay good. I'm going to be staying with my grandparents for a week in June and a couple of weeks in July, while my aunt is on vacation. So that will help too.

In OTHER news.....

We're not officially engaged yet, but we've been talking for a while now, and we are going to get married. Some of you probably already know that. But I just wanted to post it anyways. I'm so happy.

I am so sick of hospitals! 3 days at the hospital with Grandpa. And then Daddy has been in for over a week. I've been here with him every day for a week except yesterday. And this hospital is really getting annoying. The building itself is great. Big rooms, really pretty atrium, food court, etc. But the people.... While they are nice, they don't do all that much. Ya know, usually when you're in the hospital, they come in every hour or so to take vitals, give medicines, etc etc etc. Here, it's like every 4-5 hours. And they haven't asked him how he's doing or if he needs anything. Except for a couple of nurses.

Also, they've diagnosed Daddy as diabetic. Which he and I both know is crap. He eats healthier than anyone I know. No white sugar or white flour. No white potatoes, not much beef. He eats a lot of salmon and broccoli. They said his blood sugar has been high for a while, like up in the 200's. It should be like 70-100 approximately. The only reason his is so high is because he eats ice cream and drinks sweet tea. I mean literally. It's really frustrating.

The diabetic dietitian was just here to tell him how to eat. Which he already eats correctly! Now he's getting a glucose monitor. He's thrilled. (can you hear the sarcasm DRIPPING from that statement?)

I'm so sick of doctors and hospitals and everything. I'm ready to go home.

Well, that's all for now. I guess I needed to vent. There will probably be more later. This has been a very rough couple of weeks for me.

My Thoughts

I can't ever think of any intriguing, funny, or thought provoking things to say on my blog. Much less the Title! I used to be much better at this. That was kind of my point in starting this blog anyways. To work on my writing skills, etc. Yet, here I am, a year after I started my blog. Am I getting better at it? No.

Well, maybe. Ha ha!

Right now I have to go make dinner for my grandparents. I'll write more later.
